1/3 cup seasoned bread crumbs
1/4 cup grated or shredded parmesan cheese
1 egg, whisked
4 small zucchini, quartered lengthwise

Preheat oven to 450ºF. Combine bread crumbs and cheese. Season with salt and pepper. Dip zucchini in egg, then in crumb mixture. Bake 20 to 25 minutes on baking sheet sprayed with nonstick spray until golden brown and tender. Yield: 4 servings
